Cold Tuna and Egg Sandwich

Remember when I posted some high-in-iron recipes? There was a Tuna and Egg Sandwich recipe in that post. This is an amplified version of that same recipe. Amplified with flavors, of course.

This makes a great breakfast or quick lunch. Either refrigerate your ingredients before making this sandwich or cool it up in the fridge after because it tastes freakin’ amazing when chilled. Here’s what you’ll need. 

Makes 3 Sandwiches:

For the Tuna Filling
a can of tuna, drained and broken into small pieces
1 1/2 tbsp mayonnaise
1 1/2 tbsp finely chopped onion
1 tbsp de-seeded and finely chopped tomato
1 tsp de-seeded and finely chopped green chilli
1 tsp lemon juice
salt and pepper to taste

Plus
2 hard boiled eggs
6 slices of fresh brown bread 

First, mix all the ingredients of your tuna filling. The mayonnaise gives some moisture to the flaky tuna. You can make this overnight. Take some fresh brown bread, the big slices.

Spread the tuna filling on a slice and slice your boiled eggs.

No, your eyes are not foggy. You see steam on that yellow yolk. It was still warm when I sliced it up.

Put a few slices on your sandwich and close it up. You’re done.

This is how I had most of the tuna filling and egg. I couldn’t resist.
