Grilled Ginger Chicken Sandwich

Remember when I posted this on the Facebook page a few weeks ago? I never got to actually posting the recipe. I have been partially lazy and partially busy with classes and stuff. BUT here it is, finally. A massive grilled ginger chicken sandwich that will feed a hungry human, very very well.

It is mildly sweet with a punch of ginger and absolutely to-die-for. Here’s what you’ll need: 

Serves 2:

2 boneless fillets from a chicken breast, flattened with a mallet

Marination:
1/2 tbsp dried ginger powder
1 tbsp brown sugar
1 tbsp soy sauce
1 tbsp vinegar
1/2 tbsp chili sauce
1 tsp red chili flakes
2 tbsp olive oil (any other oil will also do)
salt to taste 

4 large slices of bread
1 large jalapeno, sliced
1 large tomato, sliced
2 processed cheese slices
ketchup and mustard sauce (optional)

butter or oil for grilling the chicken

If you have never flattened chicken fillets before, you can read how to here. Instead of wax paper, try and use plastic sheets.

First, marinate your chicken in the marination and let it sit in the fridge for at least 3 hours or overnight. This will help the chicken tenderize. Once it has marinated, heat up a grill on medium heat. Drizzle some oil and grill the chicken fillets not flipping till one side is completely done (It will take about 4-5 mins; the chicken will start turning white). Flip and place a slice of cheese on top.

Let cook for another minute. The cheese will have melted by now. Place the grilled chicken on a bread slice. Put some tomato and jalapeno slices on top.

On the other slice, spread some ketchup and mustard sauce. Close the sandwich, cut up in the middle and enjoy! You can open up a bag of Lays with this or bake some potato chips, if you like.
