Healthy Tuna Salad

Someone asked me for a healthy recipe. This one is healthy and so so delicious. With healthy veggies and a boiled egg, tuna tastes really good and this is the lunch you won’t feel guilty about finishing up.

Here’s what you’ll need

Serves 2:

1 can tuna, drained and flaked
1 cup fresh lettuce, roughly broken
4 tbsp, sliced and seedless black olives
1 large tomato, de-seeded and chopped into squares
1 large potato, boiled and cut into cubes
1 cup green beans, chopped into 2 inch sticks and boiled till tende
1 large egg, boiled

For the Dressing:

3 tbsp olive oil
3 tbsp lemon juice
salt and pepper to taste

Whisk the dressing in a bowl and set aside. In a bowl, toss all the salad ingredients  except the eggs. Pour over the dressing and mix to combine. Top with sliced egg and serve.
