I am really into breakfast these days looking for new ways to cook a healthy egg. Well, I found another. Did you know it’s very easy to poach an egg?
Here’s what you’ll need:
a tsp of vinegar
a tsp of butter
1 small potato, peeled and washed
1/2 tbsp chopped fresh coriander or alternatively a pinch of oregano
1 small clove of garlic, minced
salt and pepper to taste
any sharp cheese for garnish (optional)
First off, boil your potato for about 10 mins or until well cooked. Take it out in a bowl, mash it and cover with a plate. In a pot, bring 2 cups of water to a simmer making sure it doesn’t boil. Add your vinegar and mix. In a bowl, break your egg. Now, making sure the water isn’t swirling anymore, drop in your egg. With a spoon, tuck in any loose strands of the egg, turn off the heat and cover the pot. Let it cook for exactly 3 mins if its a medium sized egg and approximately 4 mins if its a large egg. Cook it 15 seconds over if your don’t like a runny center.
While, the egg is cooking, in a pan melt your butter, saute the garlic, mix in the mashed potato and oregano or coriander. Take it out in a plate, making a bed for your poached egg. Garnish with any sharp cheese, optional. And finally, spoon out your poached egg and flip over the cheesy potato bed. You’re done!
