Ever since I can remember, we have been making Pizza at home. There’s something so gratifying about a slice of pizza that is personalized to your flavor. I love waking up the next morning to find a cup of tea and leftover pizza. This recipe has evolved over the years and I am happy to be sharing it with you.
This is for everyone who has asked for this recipe since I started this blog. Here’s what you’ll need
Makes 3 8-inch Pizzas:
500 gms all-purpose flour
1 sachet yeast
1 tablespoon ground sugar
a tsp salt
1/4 cup oil
a glass of half milk-half water for kneading
Pizza toppings of your choice:
garlic marinated chicken cubes; cooked, chicken sausages, sliced or maybe even some seekh kababs, whatever you fancy, it will work great
button mushrooms, sliced
green capsicum, diced into small squares
onions, diced into small squares
kalimati (black) olives
Cheddar cheese and Mozzarella Cheese (Mozzarella will give the stringy cheese layer and cheddar will add the dense flavor)
(this is if you can’t find ready-made pizza sauce)
1/2 can of tomato purree
1 tbsp diced onion
1 clove of garlic sliced
1 tbsp brown sugar
1/2 tsp italian herbs
1/2 tbsp vinegar
salt and pepper to taste
To start, make your dough. Sift together the flour, yeast, sugar and salt. Pour in the oil and rub the flour mixture to combine the oil till you get a bread-crumb like texture. Pour in a beaten egg and mix with your hands. Heat the milk and water mixture in the microwave for about 30 seconds. Use this to knead your dough- you might not need it all. Stop when you get a smooth texture. It shouldn’t be sticky, neither too dry. I never used milk to knead the dough. My friend Anam suggested this little tweak and it made pizza dough that tiny bit softer. Wrap the dough in cling wrap and put in a warm place to rise; for about an hour.
Meanwhile, make your pizza sauce. In a hot pan, saute the onion and garlic in some oil till tender. Pour in half a can of tomato puree and 1/2 cup of water. Let it simmer for 5 mins. Mix in the rest of the ingredients for the pizza sauce and cook till the sauce turns darker in color. Take off the heat and set aside.
Time to assemble the pizza. Pre-heat the oven to 220 C. Your dough should be double in size by now. Cut the dough in 3 parts. Roll the pizza dough balls into three 8-inch circles. Line the pizza trays and top with one-third of the sauce.
Put in your toppings, whatever you fancy.
